Restaurant of the Week: Geneva ChopHouse

Taking a vacation is often synonymous with fine dining—two experiences which enhance one’s overall perception of place and value. Hence, it’s unsurprising that Geneva ChopHouse, located at Grand Geneva Resort and Spa, is no ordinary steakhouse.

Executive Chef Dustin Urbanik’s personalized attention in terms of meat quality and preparation is masterful. Plus, his precision in terms of culinary execution is evident in the recently revamped menu. For example, the Saturday brunch offerings at Geneva ChopHouse now include an assortment of elevated options such as a breakfast charcuterie board (with prosciutto, fig and pork pate, Hill Valley Farms cheeses and lavosh); Lleyton’s Fried Chicken and Biscuits with caviar; Green Eggs and Ham; and chive latkes.

Several of the standard weekly options are also now faves among resort guests—as well as local residents—who don’t mind treating themselves to a foodie night out. The dry-aged, whiskey-wrapped steaks are certainly popular, but the addition of more allergen-friendly selections is a big draw for first-time diners who have specific dietary needs. There are 22 vegetarian and/or gluten-free items currently offered during dinner service at Geneva ChopHouse; a few of which, like the Buddha Bowl and the shaved Brussels sprouts, can be modified upon request to accommodate a vegan diet.

Without a doubt, the food is the main attraction at Geneva Chophouse. However, the bar menu has been equally elevated to match the quality of what Urbanik and his team are consistently coming up with in the kitchen. The cocktail lineup commands attention thanks to flavorful renditions on classic sips. The blackberry martini and rosemary-apricot gimlet are subtly potent with high-end base spirits like Bulldog Gin and Giffard Crème de Mure expertly combined with fruit-forward mixers. Just be sure to have a drink in hand when it comes time to toast to the pleasure of enjoying a delicious meal while soaking up spectacular sunset views.
