The popularity of plant-based eating has been booming for the last few years. And rather than stagnating during the COVID-19 pandemic, the availability of made-to-order vegan eats shifted into high gear—especially in the greater Madison region. JustVeggiez is one such food vendor which cropped up during this time. And because of the approachability of its offerings, many local residents became fans of owner Chef James Bloodsaw‘s fare quite quickly.
Much intentionality has gone into curating the JustVeggiez menu, which has only gotten larger since Bloodsaw opened the restaurant on State Street in Spring 2023. And he says that is in response to simply taking the time to really listen to customers’ feedback as well as their requests. Supply and demand definitely influence what Bloodsaw continues to cook up—or decides to kick to the curb.
Public interest was a big motivation for transitioning from solely operating a food cart to having a brick-and-mortar location. JustVeggiez is only the second fully vegan restaurant in the city. Plus a good portion of the items Bloodsaw prepares accommodate other food allergies and sensitivities such as for those who adhere to a gluten-free or nut-free dietary plan.
This is one of the reasons the pizza selections are a huge hit—it’s very customizable depending on personal preferences. In particular, dairy-free deep-dish ‘za is still a rarity in terms of dining out. The Collard Green Wrap, Famous Vegan Italian Sandwich and the Plant-Based Shrimp Po Boy Sandwich are also exclusive to JustVeggiez at the moment. Each is hands-down worth sampling for the experience. Know meat eaters who swear plants could never be as filling or flavorful as fried chicken? Then watch them delightfully be proved wrong with each subsequent spicy bite of a Carolina Reaper Chix Sandwich.
Do continue to keep an eye out for JustVeggiez at other spots around town, too; Bloodsaw still offers catering, meal planning and pop-up vending at events upon request. Because his nosh has amassed a cult following…and the queues for a taste are only getting longer.
