Milwaukee’s own Shanghai MKE—a moody, stylish speakeasy bar that serves up artfully crafted drinks in the heart of the city—has managed to breathe new life into the city spirits scene. With Kat Doughty, Shanghai’s lead bartender, visitors are treated to a timeless experience complete with nostalgic Milwaukee flair and addictive cocktails and beers (dreamed up by Doughty from behind the bar, no less).

Best part of working in Wisconsin’s mixology scene: My favorite part of working in this community is how helpful and genuinely excited each other is to try one another’s concoctions. I worked as a line cook for years before making the move behind the bar, and I owe a tremendous amount to the bartenders and chefs who have helped me translate my kitchen experience to liquid passion. 

Go-to drink: My favorite drink to make guests is the Shanghai Fog; it’s a playful riff off of a London Fog, an Earl Grey tea latte. We infuse two of Milwaukee’s best products, Rehorst Gin and Rishi Tea, and utilize egg whites and oat milk to mimic a latte texture. We then finish it off by adding a dash of lavender bitters, resulting in a sweet, creamy and surprisingly refreshing cocktail. 

Best advice to an aspiring bartender or mixologist: The best advice I can give someone is to learn your favorite classic cocktails first, then start swapping out flavors. Have fun with it, try new flavor combos and prepare to be amazed by the endless possibilities.
