If you’re familiar with Madison’s flourishing food and drink scene, then you likely know Lucas Endres’ name all too well. The charismatic mixologist and bar manager at Plain Spoke Cocktail Company—a favorite spot for Madison locals and tourists alike—has managed to introduce a fresh, new flair into the city’s spirits scene (and pay homage to Wisconsin’s inimitable charm, in the process).

Best part of working in Wisconsin’s mixology scene: The best part of being a bartender in Wisconsin is having all of the local farms and markets to take advantage of when necessary, whether it be for your own menu or for your favorite bar’s seasonal menu. 

Go-to drink: At the moment, I am loving learning about slushy machines. So, I guess anything frozen! 

Best advice to an aspiring bartender or mixologist: Take advice from people who you know who are honest.
