Ristorante Bartolotta dal 1993’s Calabria Tasting Menu

Two-time James Beard Award-winning Chef Paul Bartolotta and Executive Chef Juan Urbieta of Ristorante Bartolotta dal 1993 are continuing to take guests on a “tasting tour” of Italy, featuring Italy’s Calabria region, which starts on August 5.
The Calabria regional menu will feature the flavors of dishes inspired by the southwestern Italian region known for its dramatic coastlines and popular beaches. Menu highlights are to include Involtini di Pesce Spada con Marmellata di Cipolle di Tropea, or studded swordfish rolls with red onion marmalade, which is an homage to Italy’s famous red onions originating from the town of Tropea paired with swordfish rolls, which are a traditional dish in southern Italy.
